Beets, Bean and Tomato Salad

This beets, bean and tomato salad is an amazing raw food meal that comes ready-to-eat from Costco! It makes it so easy! Add farro, chicken, buckwheat, or quinoa for a heartier meal!

Beets are loaded with potassium for healthy nerve function, manganese which is good for your bones, liver, kidneys and pancreas, and large amounts of B vitamins and nitrates which your body changes into nitric oxide, which helps blood flow and blood pressure. Drizzle olive oil generously on the salad. Olive oil is loaded with antioxidants (always use first cold pressed olive oil!), and all those monounsaturated fats will help lower your risk of heart disease. Add some yummy balsamic vinegar, Himalayan or Celtic sea salt, and pepper. Also a little trocomare (my favorite seasoning) is yum on this too!! The white kidney beans provide more cancer fighting dietary fiber than the red beans and are a great source of protein too! Eat away at this great nourishment while doing the body good!
